Chipotle Bowls
When your cleaning out the fridge and need to make something quick and easy, this is your go to recipe. We love it cause you can allow each person to customize their own bowls. Especially good for those picky eaters!!!
So if you love Mexican food like us. You’ll love easy recipe.
INGREDIENTS:
MEAT MIXTURE
1 Lb of Ground Turkey, Chicken or Beef
1 Package of Taco Seasoning Mix or 3 Tbsp of Mexican Seasoning
1 Tsp Mexican oregano
1 Tsp Salt
1 Tsp Garlic Powder
1 Tsp Smoked Paprika
1/4 Tsp Pepper
1/2 Onion Chopped
Hot Sauce
3/4-1 Cup of Water or Broth of any kind
BEAN MIXTURE
1 Can of black beans
1/2 Onion, chopped
1/2 Red pepper, diced
1/2 Tsp Salt
1/4 Tsp Pepper
1 Cup of Broth
1 Can Green Chilis
1/2 Tsp Smoked paprika
1/2 Tsp Garlic powder
1/2 Tsp Mexican Oregano
Chipotle Hot Sauce, to taste
RICE
2 Cups of Rice ( cook according to directions)
You can use any kind, here I used basmati but jasmine or brown or white rice is great too.
1/2 lime and zest
Cilantro
TOPPINGS
Fresh diced tomatoes
Peppers, red or green
Green onions, sliced thin
White onion, diced
Lettuce or spinach, shredded
Crushed Taco shells or Tortilla Chips
Sour cream
Shredded Cheese
Guacamole or Avocado
DIRECTIONS:
Using a large skillet, on medium heat, heat up oil in the pan and add your meat, cook until done. Add your onions and cook until translucent. Now add all your spices except taco seasoning and mix till combined. Add your Taco seasoning and your water or broth. Turn heat to high until mixture is boiling. Then turn it back to med-low until water is reduced 3-4 minutes.
Take meat mixture and put aside in a bowl.
Now start cooking your rice according to directions. I have a rice cooker so I don’t have to worry about watching and stirring. When rice is done cooking. I add lime juice and lime zest.
For the bean mixture.
In same skillet fry onion in a little bit more oil until translucent and add red peppers. Cook for a few minutes. Add green chilis and all spices. Keep cooking on medium heat for a few minutes to get the spices toasted. Now add your black beans (make sure you’ve strained them). Add the broth and cook till slightly mushy 5 minutes. Now add your hot sauce, give it a taste. Put as little or as much as you like.
This is the best part. Putting it all together.
Grab some bowls.
Add your rice, some beans and your meat mixture. Layer it anyway you want. Just give an equal amount of each. Add your all your toppings. Add your sour cream, more hot sauce, splash of lime and cilantro for garnish.
It seems like a ton of work and ingredients but it’s really not because your repeating the spices in both mixtures. This took me 30 minutes to make and easy clean up.
