Hello Fresh Taco Bowl.......
You guys!!! This taco bowl is so fresh and yummy your going to make it again and again! Feel free to put all the ingredients in a bowl or in a taco. Either way your going to love it!
INGREDIENTS:
- 1 package ground turkey or you can use ground beef
- 1 garlic clove minced
- Salt and Pepper to taste
- 1 pkg Chili seasoning mix
- 1 tsp mexican oregano
- 1 cup water
- 1 can corn, drained
- 1 small container cherry tomatoes sliced in half
- Cilantro stemmed and finely chopped about 2-3 Tbsp
- Sour cream
- 1 Avocado pitted and diced up
- 1 Lime including zest from the lime
- 2 to 3 cups cooked Jasmine rice
- 2 Sprigs of green onion, sliced thin
DIRECTIONS:

First get your rice going... I use our instant pot or you can use a rice cooker. Or cook it on the stovetop... Just read the directions for jasmine rice depending on how your cooking it.

Heat up a pan on medium heat with a few drizzles of vegetable oil... Brown your turkey. Once browned add your garlic and cook for a few minutes... Add the chili powder and oregano cook it out a bit more. Add one cup of water... Turn heat to high until it boils then back down to simmer... Add your can of corn just to heat it through.

Take cilantro, green onions and lime zest and divide them in half

Take your tomatoes, avocado, half of cilantro and green onions and put them in a bowl and mix lightly... Now add a splash of lime juice.

Once your rice is cooked take the rest of the cilantro, onions, half of lime zest and add to rice... Add another splash of lime juice.

In a small bowl take 6 or more tbsp source cream... I use full fat sour cream because I love the flavor but add a few splashes of water and that way you are using less sour cream (less fat for those of you concerned) add some lime zest and lime juice... Mix till it's fluid and runny.

Are you read for this deliciousness? Take a dinner bowl add rice to the bottom... As much or as little as you like... Add your ground turkey mixture... Add your tomato/avocado mixture and then dollop your source cream all over.
TIP: You can make your own chili seasoning by using a blend of chili powder, oregano, garlic powder, onion powder, smoked paprika, cumin, sea salt, pepper, cayenne pepper and red pepper flakes. I do this by my eye and taste so I don't have exact measurements. It depends on how much your using in your recipe. Play around with it and see what you like.
I hope you guys loved this recipe. We make it at least once a week! Don't forget you can also use this filling and put it in hard taco shells or in tortillas.
